Vitamins found in cauliflower

Cauliflower of cruciferous vegetables, is the same family with broccoli, cabbage and turnips. As with cauliflower. Cauliflower is a useful and nutritious vegetable, providing many essential nutrients including large amounts of vitamin C, vitamin K, folic acid and several other vitamins in smaller quantities.

Vitamin C)
Half a cup of cooked cauliflower contains about 27.5 milligrams of ascorbic acid, more commonly known as vitamin C. This amount is equivalent to about 50 percent of the recommended daily intake of this vitamin. The University of Maryland Medical Center reports that vitamin C is an essential nutrient for iron absorption, tissue protection and healing within the body, especially connective tissue, such as tendons and ligaments, as well as teeth and gums. Vitamin C is also a powerful antioxidant that helps to reduce the levels of harmful chemicals inside the body, which can damage cells within the tissues.

Vitamin K
Vitamin K is another essential ingredient of cauliflower. This vitamin plays a central role in the production of blood clotting factors, and is essential for maintaining strong bones. Half a cup of cauliflower provides 8.5 micrograms of vitamin K, or about 8 percent of the daily intake required for an average adult of this vitamin.

Folic acid
The University of Maryland Medical Center also states that folic acid works with other B vitamins to help produce healthy red blood cells. Folic acid is also necessary in the development of DNA. Folic acid support in the production of this genetic material has led to pregnant women supplementing their diets with folic acid to help prevent certain types of congenital birth defects such as spina bifida. Serve half a cup of broccoli cooked with folate, or about 7 percent of the daily intake of this vitamin.

Other vitamins
Cauliflower also provides many other important nutrients, and if it is in smaller quantities. These vitamins include 0.1 mg of vitamin B-6 or nearly 4 percent of daily needs, and about 0.3 milligrams of pantothenic acid or about 3 percent of what is needed each day per serving. The same portion of cauliflower contains small amounts of some other vitamins, but in small amounts, including thiamine, riboflavin and niacin, according to the US Department of Agriculture's nutrient database.
