Vibrant Moroccan Dish Served with ♥ for dinner🇲🇦

It's summertime and we got fed up of grilled pork and sausages.  My husband loves #aromatic food so our kitchen is kind of international from Danish, Filipino ofcourse, thai, vietnamese and voila!  the #moroccan cuisine. I have lived in Morocco for almost 5 years and I do know how to cook some moroccan food. And chicken tagine is one our favorite.

                                                                                              

                                                     Here is my chicken tagine for dinner!


Moroccan tajine dishes are slow cooked and typically made with sliced meat, or fish together with vegetables or fruits. Common spices used are ginger, cumin, turmeric, cinnamon and saffran. . In making vegetable tagine paprika and chili are used. Tajines are served with bread but can also served with couscous.  

                                              To make a chicken tagine you need a tagine pot.

We got ours back from Morocco way back 2008. It is very cheap, it cost  between 50 -100 dirhams. You can actually choose the vegetables you like. But here is how I made mine.


                                                                   You will need :


                                                    500 grams of chicken fillet or legs

                                                    2 onions grated

                                                    3 gloves garlic

                                                    fresh coriander (chopped)

                                                   1 tsp. blackpepper

                                                   1 tsp cumin

                                                   1 tsp. paprika

                                                   1 tsp. ginger

                                                   1 tsp. turmeric

                                                   1 tsp. dried chili (optional)

                                                   2 tbsp. olive oil

                                                  4 pcs. potatoes cut into round thin pieces

                                                  2 pcs. carrots

                                                  1 cup greenpeas

                                                 3 pcs. squash ( zucchini is the best)


                                                             Procedure:


1. Put the chicken in the tagine together with all the spices and mix thoroughly.

2. Place the tagine pot on the grill with the cover and wait until it boils. Mix.

3. Put the potatoes on top of the chicken first then the carrots, greenpeas and lastly the squash or the         zucchini

4. Sprinkle with salt and pepper.

5. Cover and cook slowly. Then your tagine dish is done in around 30 mins.

6. Serve with bread. I used baguettes.

Eat it the Moroccan way! Take a small piece of bread and dip it in the tagine. I'm sure you'll sweat:-)
