Mexican Gastronomy #3 - Tortilla soup

I'm Karina, I'm from Mexico and this is the English version of "Sopa de tortilla" (tortilla soup)
The ingredients we need for this soup are
- 18 tortillas in strips
- 2 tortillas
- Oil
- 4 tomatoes
- 1 small piece of onion
- 1 garlic clove
- 2 pieces of pasilla chile
- 3 leaves of epazote
- 1 cube of Knorr
- 1 pinch of salt
- 3 cups of water
- 60 gr of chicharron
- 1 big avocado in cubes
- 250 gr of panela cheese in cubes
- cream
First, put the tomatoes and the piece of onion in a pan to get them roasted
While the tomatoes are ready, we start frying the tortilla strips little by little until all of them are fried.
Chop the chiles and remove the chili seeds from them as much as you can. In a pan add 2 tablespoons of oil, fry the chopped chili for just a few seconds, get them out and in the same pan, fry the 2 whole tortillas.
After all of that is ready, put in the blender the roasted tomatoes and onion, add the garlic, the cube of Knorr, the pinch of salt, the 2 whole fried tortillas, half of the chili you just fried and 2 cups of water, liquefy.
In a casserole add a tablespoon of oil and pour the previously blended mixture, add the epazote, cover it and leave until boiling. Check if it's necessary to add salt. Remove the epazote.
Now that all it's ready the following steps are for serving.
Put the fried tortilla strips in the center of the plate, pour the mixture around, add cream to taste, some avocado cubes, panela cheese and chicharron, finally, put some pieces of roasted chili and enjoy.
TIPS:
- Serve and eat as soon as possible to enjoy the crunchy fried tortilla strips.
- If you can't get the epazote you can skip it.
- If the chicharron is difficult to get but you want to add protein, an option could be shredded chicken.
- If you want to make a healthy version of this recipe, instead of frying the tortilla strips you can bake them, avoid frying the whole tortillas and don't add oil into the casserole when boiling the mixture .
