Gluten Free Banana Honey Muffins

in #food7 years ago

Let me tell you that these muffins didn't last long and the house smelled amazing! This recipe is simple, moist and bursting with flavor. (That's what she said) I don't see why you need to put so much sweetener when you already have an ingredient that is super sweet. If you like your baked goods super sweet, double the honey but you won't regret making it with less honey.

(My kiddos had a great time mashing the bananas!)

  1. Once bananas are mashed, add egg, honey, melted butter, and vanilla.

  2. Fold dry ingredients in with the wet ingredients until all is combined. DO NOT OVER MIX!

  3. Spray your muffin tin with non-stick spray or use paper liners.

  4. Scoop 1/4 cup of the batter in the liners.

  5. Bake for about 15-20 minutes.

  6. Wait for them to cool slightly.

  7. ENJOY!

My favourite dessert are muffins. I love them!

Yummmmm! I am impressed that they look so moist because that is often a challenge with gluten free desserts. Being celiac, its frustrating to get sooooo excited about a tasty treat and it taste like sand. I'll def be trying this out :-)

Baking with bananas is a favorite, I have made banana pancakes but not muffins. Gotta try this!

They look so delicious and moist! How fun that the whole family got involved in cooking the muffins :)

Btw I nominate you to join the 7 day B&W photo challenge! https://steemit.com/sevendaybnwchallenge/@sagescrub/day-4-seven-day-black-and-white-photo-challenge

They were wonderful! It’s fun including the kids. Most of the time they make more of a mess but I have to learn that they won’t be little forever.

Haha. I’ll check out the photo challenge tomorrow. :)

Sometimes it's fun to get messy with the kids and just be a kid again :)
