CHAOS cook KusaTsuri *7: I promise you, your fried potatoes won't be boring anymore!!!

Are you tired of eating fried potatoes only with ketchup or even without anything?

Here comes a vegan recipe which will upgrade your potatoes for sure 😎

Let's get started. The used ingredients:

  • ~700 g potatoes
  • 4 onions
  • 3-4 paprikas
  • 6 tomatoes
  • 1 cucumber
  • 2 gloves of garlic
  • 2-3 teaspoonspaprika powder (sweet)
  • 1 chili pepper
  • olive oil
  • rosemary
  • thyme
  • 2 tablespoons cider vinegar
  • pepper
  • salt

Carve a cross on top of the tomatoes and dash them with boiled water. While the tomatoes are lying in the water you can start chopping the paprikas in medium sized cubes. After that take the cucumber, peel it, spoon out the cores and chop it in medium sized cubes, too. Now you can peel the tomatoes (!careful! They can be quite hot inside)and cut them roughly. All these chopped vegetables you can put in one bowl.

Now you can start cutting 3 of the 4 onions and the garlic in small pieces. Take the chili pepper and cut it in small rings.

Now we start with the final cutting part: the potatoes!!! I like to eat them with their skin, if you don't then you have to include the step of peeling here ^^. Well cut the potatoes as you would cut them for fried once. I like them in cubes or in slices. Take a pot and let the chili peppers to braise lightly in olive oil. Add the garlic, the thyme and the rosemary. Don't braise them too long otherwise they will taste bitter.

Add the onions to the pot and let them glazed sweat. Now you can add the bowl with all the vegetables you chopped and two tablespoons of cider vinegar. Mix everything and spice it with some salt and pepper.

Let it cook over medium heat for around 30 minutes. While that you can prepare your fried potatoes. therefore take a pan, put in some oil and fry the potatoes as you like. I like to add some onions here too^^.

And this is it you are READY!

I like to top it with some oregano but you can also chose something else 😉.

Some tips and suggestions:

  1. I f you love tomatoes then I would suggest to use more then 6. Or add some tomato paste. Otherwise you wont taste them that much.
  2. I will try to add some sprouts next time... think they will fit fine!
  3. You can use rice instead of potatoes. I find this even more delicious!!!😍
