Not everyone has time to cook complicated and elaborate dinners, that's why this easy chicken parmesan is one of tried and true go-to meals.


No matter the meal, the less steps required the better. Don't get me wrong, I love to cook, but i don't want spend hours in the kitchen for a meal i'll finish eating in 15 minutes.



That's why I love this chicken parmesan recipe so much. It's quick and easy but doesn't lose out on any of the flavors a complex meal might have.

Ingredients


4 chicken breasts 3 eggs
1 1/2 cup panko bread crumbssalt & pepper
1 cup mozzarella cheese24oz. can tomato sauce
1/2 cup grated parmesan cheesecooking oil
meat mallet

Directions


Preheat oven to 475°F

On a cutting board place chicken and cover with one layer of clear plastic wrap (saran wrap). Using the meat mallet pound the chicken so it is about 1/2 inch thick. Remove plastic wrap and season with salt and pepper. I also like to add a little bit of chilli powder and Lawry's Seasoned Salt, but that's optional.



In a wide but shallow dish or plate whisk the eggs. In a separate dish or plate combine the breadcrumbs and grated parmesan cheese. Dip each chicken breast into the eggs covering both sides, then dip each into the breadcrumb mixture. Do this for all of the chicken breasts.



In a frying pan, pour in cooking oil, about 1/2 inch of oil in the pan. Heat oil until it starts to bubble. Place chicken breasts into the pan 2 at a time and cook on both sides for 2 minutes. The outside should be golden brown. While they cook, grab a glass baking dish and pour in 1/2 cup of tomato sauce into the bottom.



When the chicken is done browning transfer to the glass dish.Cover all of the chicken breasts with the rest of the tomato sauce. Top each with the shredded mozzarella cheese and grated parmesan cheese. Place in oven and cook for 25 minutes.



Remove from oven and let cook for 5 minutes before serving. If you try this recept or have any questions let me know in the comments section below!
