How to prepare banga stew (ofe akwu)
Hello steemians I know most of you are always interested in African dishes and have been yawning to have a taste of it ...
Today I will be writing on how I prepared my favorite stew banga stew local name
Banga stew is mostly associated with the people of eastern Nigeria .
Other parts of Nigeria may prepare it as soup especially by those in the Niger-delta region.
Banga as it iscommonly called by most people is made from palmfruits which undergoes series of refining processes.it is from this palmfruits that red oil is being produced too.
To make a banga stew the following listed below are used
Banga or akwu (palmfruit)
Dry fish
Ice fish
Grounded Red peper
Salt
Sliced onion
Seasoning (maggi) and efu(local seasoning)
Scent leave(nchanwu)
Pupkin leave (ugu)
Procedures
- Boil the palmfruit upto 15 minutes ,then pound and squize to extract the oil which will be in this form
Then boil for another 15 minutes to thicken boil till a thin film of oil appears on the surface. - add the ice fish and wait for sometime then add the dry fish
- add the seasonings which involves cray fish,maggi, onions.
- grind the efu then add to the already boiling pot then add salt to the desired quantity and wait for sometime
- add the scent leave wait a little and add the pupkin leave wait for a few minutes then put the pot down
then the food was served and eaten with cooked white rice
With this few steps the food is set, i hope i was helpful with this? you can try cooking it with this steps i just enumerated and give me a feedback on how the stew tastes .
