Chocolate Magic Cake – Magically Transforms into 3 Delicious Layers
Have you ever heard of a magic cake? Well, I hadn’t and what the heck was a magic cake anyway? Well, after seeing it pop up on just about every social media avenue there was, I finally decided to check it out.
Boy, am I glad I did. What a fantastically delicious idea that transforms normal every day kitchen staples into a cake that actually bakes into 3 layers. It really is magic!
There’s a dense chocolate cake on the bottom, a chocolate custard in the middle and a lighter almost spongy cake on top. Yep, you guessed it, this is a cake for chocolate lovers. And who doesn’t love chocolate? I mean, just look at all that chocolaty goodness! It’s rich, creamy and you’ll fall in love at first bite.
This version first appeared on my website, 2 Cookin’ Mamas, April 2016, and it’s been a popular recipe for those that need a quick delicious dessert that’s great for any night of the week.
This cake is so easy that it practically makes itself. Mix up the batter, pour it in a baking pan and voila -you’re done! Decorate it with a little powdered sugar and some strawberries and get ready to dig in.
Hope you enjoy!
Chocolate Magic Cake
Prep: 20 minutes Cook: 1 hour Total time: 1 hour 20 minutes
Ingredients:
4 eggs, room temperature
3/4 cup sugar
1 Tablespoon water
1 stick of butter (1/2 cup), melted
Pinch of salt
1 teaspoon vanilla extract
6 Tablespoons + 1-1/2 teaspoons all-purpose flour
6 Tablespoons cocoa powder
2 cups milk, warmed slightly
1 teaspoon white vinegar
Garnish: powdered sugar, strawberries or raspberries, mint leaves
Directions:
Preheat oven to 325 degrees. Spray an 8×8-inch baking dish with nonstick spray.
Separate eggs and place yolks in a large bowl of an electric mixer. Add in sugar and water & beat until creamy & light.
Continue beating as you add in melted butter, salt and vanilla. Mix until well incorporated and batter is light & fluffy.
In a small bowl, combine flour and cocoa powder. Add to batter a little at a time, mixing well after each addition. Continue mixing and add milk, warmed just enough so that it doesn’t cause the butter to gel. Batter will be thin.
Beat egg whites and vinegar in electric mixer until they form stiff peaks. Fold a little into chocolate mixture. Then fold chocolate mixture into the remaining egg whites. Combine all together and fold gently.
Pour into prepared pan. Bake 60-65 minutes or until top edges look set and the center jiggles just slightly.
Place on wire rack to cool completely. Once cool, cut into squares. I put mine in the refrigerator for a bit to make it easier to cut. Garnish with powdered sugar and fresh berries.
Store in refrigerator.
I love comments and appreciate any and all feedback. If you enjoyed all this deliciousness (and I sure hope you did) please
