Chicharrón Entomatado ( Pork Skin In Tomato Sauce)

This Mexican dish is extremely fast to make and very delicious. It is often eaten with tortillas or a bolillo(a roll). I really enjoy making this dish with my amazing husband ❤️

Ingredients:
• 3/4 pounds of chicharrón (Pork Skin)
• 3 pieces of castacán (Fried Pork Belly)
• 4 large tomatos
• 1 green bellpepper
• 1 white onion
• A handful of cilantro
• 1 large can of salsa de pato
• Salt (To taste)
**If you want more spice go ahead and add a serrano pepper

Instructions:
-Prep the chicharrón and castacán by cutting them into medium size pieces

-Rough chop tomatoes, bellpepper, and onion (divide into two batches)
-Throw first half into blender along with some cilantro and half of the salsa de pato
-Add some salt and blend

-In a large saucepan pour in the first batch of the blended sauce but do not turn on the heat until the second batch is in

-Throw the rest of the tomato, bellpepper, onion, cilantro and salsa de pato into the blender and add more salt (depending on your taste)
-Blend and pour into the saucepan

-Turn the heat on to high and bring sauce to a boil, stir occasionally

-Once the sauce is boiling throw in the pieces of chicharrón and mix until all the pieces are coated in the sauce
-Turn heat down to a medium and then throw in the pieces of castacán
-Mix well until everything is coated

Let everything simmer for about 5 minutes and boom you're done!
