Eating Vegan

Sounds gross to me because of my love of bacon and all things cheese. However, it looks like it is one of the healthiest long term diets if it is done right.

After watching Forks Over Knives, I was interested in making some changes to my family’s meals.

After some reality checks-

I came to the conclusion that we would be social omnivores… eating meat when it came to special occasions or family get-togethers. We do not have any dietary issues, and we did not want to impose our new meal planning on anyone.

Forks Over Knives has a Meal Planner that you can sign up for at various price points. It seems like a great idea with all of the extras that it has. A weekend prep planner and a shopping list are a welcome addition to our busy lives and hopefully will take some of the guess work out of if we are getting enough protein.

That being said when I shared this information with my family I was met with a variety of responses. The most common one being

So to start we will be making 3 meals per week that are not vegan and slowly moving towards fully vegan by the end 2018.

Our first vegan recipe was a White Bean Minestrone

Great recipe- family thought it needed something so they added Parmesan.
