Lazy Cook #1 healthy, vegan, summer salad (easy)
Easy peasy lemon squeezy salad (btw, you can actually squeeze lemon in it). I was looking for something that can be done in less than 3o minutes(yes, because I'm a lazy cook), is healthy, easy and can be eaten cold. This is an eggplant salad with tomatoes, carrot, bell pepper and onion.
Ingredients
- eggplant (2-3 medium sized)
- carrot (1)
- tomatoes (2-3)
- bell pepper (1-2)
- onion (1-2)
- garlic (optional)
- salt
- parsley (optional)
Prepare
- wash your eggplants. slice them 2-3 in width
- cut carrots in strips, bell pepper and onion in half circles
- peel(optional) tomatoes and cut in any shape you like
- mince garlic
How to cook
- Grill (for healthier version) or fry eggplants both sides
- pour vegetable oil, when the pan is a little bit hot put carrots and cover it for 10 minutes
- add salted vegetables in pan, cover for another 10 minutes, then turn the heat up for 3-5 minutes
- mix everything in a bowl, you can add parsley, lemon juice, balsamic vinegar.
