Trader Joe's Cookie Butter Cookies Copycat Recipe

Everyone has a favorite cookie, for some of us our favorite may be homemade while for others it might be store bought. My favorite cookie is forever changing, when I was younger, my favorite cookies were the soft vanilla sugar cookies covered in pink icing and sprinkles that you could buy from the grocery store. Luckily, for the sake of my health, I went off of them a long time ago and have had many favorites since. My most recent favorite has been the Cookie Butter Cookies from Trader Joe's so I thought I'd try and make them myself. My nearest Trader Joe's is 45 minutes away, and as much as I love their cookies, I don't always feel like driving that distance to get a fresh box.

Luckily, this recipe is quick and couldn't be any easier. The cookie itself is a basic shortbread that is so buttery it just about melts in your mouth, and the filling is a store bought cookie butter spread. You can use whatever flavor cookie butter you want, these are delicious with the chocolate one too. I'm going to keep this as close to the Trader Joe's cookies and use classic cookie butter.

Trader Joe's Cookie Butter Sandwich Cookies

Ingredients:

1 cup unsalted butter, softened
3/4 cup powdered sugar
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 container of Trader Joe's Cookie Butter

Directions:

First, preheat your oven to 350°F and line a baking sheet using parchment paper.

In a large bowl, mix together the butter, powdered sugar, and vanilla using a spoon. Then, stir in flour; you can use your hands once the dough is too thick for the spoon. If your dough is crumbly add in 1-2 tbsp more butter.

Between two sheets of parchment paper roll dough out to 1/2 inch thickness. Cut into desired shape and size using a knife or cookie cutter. You are going to want to place the cookies 1/2 inch apart on the lined cookie sheet. Bake them for 14 to 16 minutes or until bottoms are a light golden brown. Once out, immediately remove from cookie sheet to wire rack. Cool completely, about 30 minutes. Once they are completely cooled place a spoonful of cookie butter on a cookie, then place another cookie on top.
