İskender Kebap
Iskender kebap one of the most delicious food of Turkish kitchen. Doner is the main ingredient.
Iskender kebap special to Bursa region, located at southeastern part of the Marmara sea.
Now I'm gonna tell you how to make a homemade doner.
INGREDIENTS:
800 gr. Entrecote. (A boned steak cut off the sirloin.)
Olive oil: 5 spoon
Thyme: 2 tea spoon
Red crush pepper: 2 tea spoon
Allspice: 2 tea spoon
INGREDIENTS FOR HOMEMADE ISKENDER:
Pide bread: 3 pieces
Tomato: 3 pieces
Yogurt: 1 bowl
Salty butter: 70 gr.
Tomato paste: 1 spoon
Pepper paste: 1 tea spoon
Green pepper: 4 pieces
Salt: 1 tea spoon
PREPARATIONS FOR HOMEMADE ISKENDER:
1: Slice the steak to thin pieces.
2: Mix steak, olive oil & spices.
3: Keep the steak in a fridge for one hour before cook it.
This will add more flavor.
4: Slice the bread in a small (dice) pieces.
5: Put to bread in a oven untill gets roasted.
6: Pour tomato & pepper paste in a frying pan, add some water & mix it.
7: Add steak in a frying pan untill gets cooked.
8: Place the slice tomato & grilled pepper in a plate.
9: Place the roasted bread bottom of the plate.
10: Place the cooked steak & souce on a plate.
11: Melt the butter in a frying pan& put on a Iskender.
12: Add yogurt.

NOTE: Some info about main ingredient, doner: A type of kebab that is thoroughly seasoned with doner or doner kebab, tallow and local spices, and pieces of pounded meat are cooked on a skewer and cooked upright against the wood fire. Restaurants, cook to doner with this technic.
