Did you know that cauliflower is considered a superfood?!
Cauliflower is part of the cruciferous family of vegetables along with broccoli, kale, and Brussels sprouts. Because it is high in antioxidants, vitamins, minerals, fiber, carotenoids, sulforaphane, and phytochemicals cauliflower is making its way onto more and more plates! The high levels of antioxidants help prevent chronic illness and may ward off heart disease, cancers, and metabolic disorder (obesity). High levels of fiber, vitamins, and minerals also help with feeling full and packing in extra nutrition to help our bodies work more efficiently!
Carotenoids and phytochemicals provide cauliflower with the many different colors it displays. Carotenoids contribute to eye health, building our immune systems, are anti-inflammatory, and research has shown them to have cancer-fighting properties. Phytochemicals are essentially chemicals produced by plants. Diets rich in phytochemical have been shown to reduce the risk of type-2 diabetes, increase cardiovascular health, prevent neurodegeneration (1). You can almost eat the 'rainbow' with just this one vegetable! Another one of this super food's many benefits is that it contains the compound sulforaphane, a compound known to kill cancer stem cells! Sulforaphane has also been heavily linked to anti-aging benefits and improving thyroid health (2).

I hear you! That last recipe is a fav amongst those I know who do not like cauliflower! >:D If you can get it roasted so it's a bit crunch on all sides it will melt in your mouth!
