COCONUT CUPCAKES

Hello my dear friends of Steemit. Today I bring good news to all the lovers of the "Coconut", because this weekend I dared to prepare some delicious "Cupcakes" of this wonderful fruit and I really want to share with you my pleasant experience.

As we all know, "Cupcakes " is a fairly traditional dessert, which we commonly consume to satisfy those moments of anxiety where we eat a sweet. But in this opportunity I want to give it a particular and quite original touch when combined with the tasty flavor of this Caribbean fruit. You will see that as results we will get some juicy and fluffy cupcakes that will also be decorated with a little coconut frosting.


To savor this delicacy I invite you to follow these easy steps:


Ingredients:


-For the preparation of the cupcakes:

• 130 grams of flour.
• 100 grams of sugar.
• 50 grams of butter.
• ½ cup of coconut milk
• 1 spoonful of yeast.
• 4 tablespoons of grated coconut.


-For the preparation of frosting:

• 50 grams of butter.
• 2 tablespoons of icing sugar.
• 3 tablespoons grated coconut.
• 2 tablespoons of coconut milk.


Preparation process:

• The first thing we must do is make sure we have gathered all the ingredients.

• For the preparation of the ponquesitos, we look for a big container and we add the butter and we begin by crushing it and then we beat until it reaches a creamy point.

• Then add the rest of the ingredients for the ponquesitos and beat very well until they are well integrated and the mixture lift a little.

• Then, in a tray for ponquesitos, the paper molds that are resistant to the oven are inserted and they are filled halfway and they will increase in volume during cooking. Then they are taken to the preheated oven at 180 degrees for approximately 40 minutes.

• While the ponquesitos are in the oven we take advantage of the coconut frosting, and for that we look for a container and we add the butter to room temperature, then we add the grated coconut and the sugar glass.

• Proceed to crush the butter and continue beating adding coconut milk, until it is well creamy.

• Once ready, the ponquesitos are removed from the oven and left to cool.

• For the decoration, a little frosting is placed on each of them, ending with a touch of grated coconut. To improve the decoration you can help with the use of a pastry bag, and give it the shape you like the most.
