Simplest and Fastest Homemade Bread Ever! (vegan)

There is no better thing than fresh and still warm homemade bread. Oh, and that smell in the kitchen! Whenever I pull it out of the oven, I cut the crunchy corner and eat it with butter and salt or just stuff it to my mouth plain.

Homemade bread is so much better than that being sold in supermarkets both in taste and quality. I think the main reason why people do not bother baking it is that it takes so much time. All that kneading and proving! Today, I want to suggest a solution. This bread is pure goodness with no kneading or proving. And it works every time!

You will need:

500g of spelt flour (wholemeal or white);
10g of dried active yeast (or 30g of fresh);
150g of seeds (everything works: pumpkin, sunflower, chia, flax, sesame or mix)
½ teaspoon of salt;
500 ml of water;

If you use dried yeast: mix all dry ingredients, pour in the water and mix very well.

If you use fresh yeast: mix all dry ingredients, melt yeast in water (use warm). Mix everything together.

The dough should be very wet, more like a cake mix. Grease a cooking tin with some olive oil, pour in the dough. Spread some oil over the top and sprinkle with extra seeds. Bake in 200C oven for 1 hour, then take the loaf out of tin and bake for 10 more minutes. Let it cool down on a rack, though I start eating it when it is still warm (haha). Enjoy your self-made bread loaf!
