First get a large iron skillet nice and hot. While the skillet heats we take a 10 lbs Pork Butt....
We make a rub with some ground pepper,sea salt, garlic powder, teaspoon of chili powder, half a teaspoon ground cumin, a little thyme.

Mix in one table spoon extra virgin olive oil. Now smack and rub the seasoning into the butt.

    Now you should have one nicely seasoned butt. 

Next we sear in the flavor, place butt in the hot iron pan. Do all sides till nicely browned save the side with the fatty layer for last and sear this side seven mins.

 Now we transfer the pork into a slow cooker, and  make sure u get all the season in with the pork. You can add a quarter cup of  red wine or water to the skillet. This will ensure you get all flavor.

Cook in slow cooker 3hr. Then add in one can of cranberry sauce and a half a cup of sirracha BbQ sauce cook two or three hours. Serve on good bakery rolls... Hope you Enjoy. As this is one of my favorites.
