*My Study Trip* (Part-II)

ACKNOWLEDGEMENT

Start with the name of Almighty Allah Who is the creature of everything of the world. Anything can’t move without the order of Almighty Allah. Anything can’t be possible without a proper struggle, hard work, positive thinking and proper guideline. Many time our teacher give us good news related trip of food industry but due to security reasons, it was a delay. But we highly appreciate our teachers Sir Ahmad Raza and Irfan Aslam due to their hard work it’s become possible visit of food industries. They satisfy the industry management to allow us to visit of their industry. All credit goes to our all teachers who work very hard to make it possible.

ABSTRACT

We are students of D.A.E Food processing and preservation Technology in Govt. Technology College Sahiwal. Our session is 2015-18. In D.A.E food technology, we learned food processing and preservation technology. In theory, we read all procedures for conversion of raw food into end product not only end product safe healthy for human consumption product. We learn here what is the proper way to make a good healthy food product for a human. We read processing of food, the composition of different foods, chemistry and chemical structure of foods. Microbiology of food controls the spoilage of food by inhabitation of microbes or killing of the microbe. At the small scale, we also learn some practices of food like processing of food, different analysis of food in the analytical lab. Our teachers try to give us all instructions about the study by using all facilities of processing labs and analytical labs etc. But real use all these roles which are we learning here in the food industry. With the theory and limited practice in college, it is also the necessary part of the study to visit the industry where all these roles are using. For this purpose, our teacher takes us toward the food industry for the educational visit. We have visited two food industries on dated 16-02-218. We have visited Michelle and Big Bird food industries. We want to say a lot of thanks our teacher who allows us for this visit. As a student of food technology, it was the big opportunity for seeking, for learning and understanding the industrial rules. We all were very excited and enjoy that trip. It was the nice journey at college buss.

MICHELLE FOOD INDUSTRY

Michelle Food Processing industry only we read in our books before visiting. We read it is situated in Renalakhurad. Their own gardens of fruits and mostly they process fruits for making different foodstuffs. Before visiting we know the products which are prepared by the Michelle food industry. Finally, after a little journey from Sahiwal to Renala at college Buss, we reached Renalakhurad Michelle food processing industry. The industry management takes us with them for the visit of processing areas of Michelle food industry. We visited many processing areas of the Michelle food industry which are as follow.

HYGIENE

The hygiene level of industry was very good. Before the entering of any person in processing areas must be wear hygiene cap and mask. Personal hygiene of every person also counts in the Michelle food industry. We washed the hand properly before going towards the processing areas of Michelle food industry. We are happy to see their good hygiene level.

CONFECTION, CHOCOLATE AND KETCHUP PROCESSING

When we enter the industry processing area a big noise of heavy machinery was there. First of all, they take us towards the confectionary processing area where big blender was working for the blending of sugar and pulp of fruits for making material for further processing. After that, we took the process of preparing crystal candies and other toffies etc. Temperature of everything was set according to the standard. After that we went to the chocolate processing site where we see how chocolates prepared by using of plant machinery like roasting, ingredient mixing by a big mixture like sugar, flavor, layering of caramel, sheeting, cutting according to set size standards, coating, cooling, packing and date tagging. We see all procedure of preparing ketchup like grinding of the raw material, sucking the raw material by a high pressure or vacuuming boiler, spicing, mixing of spices of pulp, packing in glass bottles and pouches. Lidding screw lids, packaging, hot water washing, cooled water washing, and finally packed in a secondary or tertiary packing material. All mentioned procedure we look and understand ever steps which we could not understand by theory or our the syllabus of our the course. All procedures were in front our eyes. Consciously we observed all the industrial terms and rules & regulation of the industry. That was amazing and very joy full time because which things we read in our books all procedures were used by the labor of the industry in front of us. We were very impressed and happy after this visit.

“BIG BIRD”

After visiting of Michelle food industry we started our journey toward the Big Bird poultry meat industry. Big Bird is situated at National Highway Bhaiphero near Lahore. Finally we reached our destination after 1 hour. Location and outlook of Big Bird were very nice and good managed. We were round about 80 students. Big Bird industry management allows us to visit the industry in two batches of students which depends on 35 students. We were in the second batch. We were very excited because the first time we were visiting any meat industry in life. After the visiting of the first batch, we were ready to visit the industry. Finally, industry manager calls the second batch for the visit of the industry. We were very glad and management of industry welcomed us at the gate of the industry. When we enter the industry we look the environment of the industry was highly cleaned. First of all the managers of industry one was the QA manager and second was plant manager take us to the conference room. In the conference room, they give us instruction of their plant through a presentation at multimedia. All procedures of poultry processing from feeding to finish product they told us by that presentation. We were very excited because those all procedures we were read in our course. When the presentation ended questioning and answer session also held there and we show our study experience and manager share his industrial experience with us. By questioning our confidence level become high. After the ending of their presentation, they moved us toward the processing areas but they do not allow us to enter in processing plant because meat is the very sensitive food product and need more hygiene and care. Because meat can be deteriorated by the unhygienic conditions of visitors, workers, and others which go to the plant without the special hygienic dress. We just see all procedures through a transparent glass wall which was at the upper side of the plant. The industrial management provides us refreshment through the chicken nuggets, chicken burger, and cold drinks. A great educational visit we were very happy. We want to say special thanks to our head of the department, all instructors and other staff that help us to make this visit possible.
