Recipe: Vegan Coffee Cake Donuts

Ingredients:

  • 1 cup (120 g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup almond milk, unsweetened
  • 1/2 cup (100 g) granulated sugar
  • 1 tablespoon ground flax + 3 tablespoons warm water
  • 1/4 cup oil
  • 1 tsp vanilla extract

Cinnamon Streusel Topping:

  • 1/3 cup (43 g) all-purpose flour
  • 1/3 cup (65 g) brown sugar
  • 1 1/2 tablespoons (22 g) vegan butter
  • 2 teaspoons cinnamon

Glaze:

  • 1/2 cup (57 g) powdered sugar
  • 2 teaspoons almond milk, unsweetened

Directions:

  • In a small bowl, mix together the ground flax and water to create flax egg. Let sit for 5 minutes.
  • In a medium bowl, whisky together the flour, baking powder and salt.
  • In a large bowl, add almond milk, sugar, oil, vanilla, and flax egg.
  • Add the dry ingredients to the wet and stir until combined.
  • Pour batter into a piping bag or ziplock bag.
  • Grease the donut pan with an oil spray.
  • Pipe batter into each donut cavity.
  • In a small bowl, mix flour, brown sugar, butter and cinnamon together. Mix until it’s come together.
  • Sprinkle the topping onto the donuts. Press streusel into the batter.
  • Bake at 350 degrees F for 15-18 minutes.
  • Let donuts cool in the pan for a few minutes before removing them to a wire rack to cool.
  • In a small bowl, whisk together powdered sugar and almond milk.
  • Drizzle over donuts.
