Vegan Curried Buckwheat Burgers

This is a fantastic recipe to rival even some of the finest burgers, vegetarian or otherwise. In this recipe we will be using the nutritious wonder food "Buckwheat". This has a fantastic nutty flavour and is bursting with goodness. You can pick up buckwheat in most supermarkets in ready to cook pouches or at specialist food shops. This recipe uses the roasted version, however either will do. The combination of the nuttiness from the grain and the curried vegetables really works well here is sure not to disappoint.

Ingredients

1 x 100g boil in bag buckwheat
1 x large sweet potato, boiled and cubed
1 x large white onion, diced
1 x clove garlic, grated
1 x medium green pepper, diced
6 x button mushrooms, diced
1 x tablespoon madras curry powder
Salt and pepper to taste

Method

1, Add the boil in a bag buckwheat to a large pot of boiling salted water, once ready set to the side to cool.
2, Sweat down the onions in the pan and add the madras curry powder.
3, Add the garlic, pepper and mushrooms  and cook until the onion has turned transclucent. Set aside to cool.
4, Boil the sweet potato in a large pot of boiling salted water.
5, Once sweet potato is soft enough to mash (can be easily pierced with a knife) drain the potato and add set to the side to cool.
6, Add the sweet potato to the buckwheat and slowly mash together with a potato masher. Add the onion mix to the buckwheat and potato and slowly mix together until it forms a stiff mass.
7, Shape into burgers and fry in a small amount of your chosen oil for 5-10 minutes each side (depending on the size) or until golden brown and hot throughout.
