Late Winter early Spring Tempeh Salad
Goodday everyone, heres a salad for the cold months these veggies are found in europe over the winter months, early and late winter. Try to find everything in organic.
You need:
Radichio half (soak in water for 1 hour after cutting otherwise it´s bitter) skip this if you like it bitter.
Rocket leaves
Fresh orange
Fennel
Tempeh cut into cubes. about 6-8 peices per skewer
Roasted wallnuts ( 2 tbs)
Olive oil
Tempeh marinade: 1tsp soya sauce 2 tsp lemon juice
Balsamic cream
start by peeling and cutting the orange, cut into wedges try to cut all the white stuff away leaving just the orange sections exposed.
then fry the tempeh in some olive oil till golden brown then add the marinade and cook for 10 secs longer.
take away from heat.
Then first put rocket at the bottum of plate.
Then the radichio.
cut the fennel into thin small strips.
add to outer layer .
Then add the oranges and wall nuts .
skeew the tempeh and add to plate.
then take the balsalmic cream and decorate the plate, add good olive oil on top and serv with bread.
