VEGAN RICOTTA
Hey everyone heres a vegan ricotta recipe it`s quik and easy to make. Heres what you need.
1L soya drink
5g nigari (magnesium chloride)
Take 1L soya drink heat it in a pot to 82-85 degrees celcius not more than 85 or it will be too hard(it should be like silken tofu).check very carefully...
in the mean time measure the 5 g nigari (magnesium chloride) heat some water in a seperate pot till it boils then add the magnesium chloride to the water not the soya drink...
When the soya drink reaches the temprature add the boiling water with the nigari.This is important if the water is too cold then the temprature of the soya drink drops and you will not get the right results. So make sure the water is boiling.
Take the pot off the heat source immediately after adding water nigari mix. Wait about 20 minutes till everything has curdeld.
Then find some sort of strainer with small holes(if the holes are too big you will loose alot of ricotta) . In the photo i used a plastic basket like thing wich is made for making cheese.
also add salt 1% so if you made 500g ricotta you add 5g salt.
