CARAMEL OAT PARFAITS / easy and healthy vegan breakfast

Don’t know what to make for breakfast? You came to the right place. Today we’re making caramel oat parfaits.

These have layers of soaked oats, fresh peaches, granola and date sauce which tastes like caramel.

If you are a fan of overnight oats then this is a recipe for you! I eat them pretty much every single morning and having them in a parfait is a nice way to switch things up. All the other layers add fun texture and additional flavours.

Even though there’s no actual caramel in these, they still taste like caramel. To me, the taste of dates reminds me a lot of caramel, especially when using medjool dates which are a lot sweeter and softer. By blending them with some water, I created a ‘caramel sauce’ which I named date sauce just because I know there’s many people that don’t agree dates taste like caramel. But I’m telling you, they do, you just have to find the right ones.

Peaches are one of my favourite fruits. I love their sweet taste and the freshness of them. Even if you have the most decadent meal and you add peaches it’s going to taste like summer.

Since there is no cooking or any use of heat what so ever in the process of making this parfait, it is a perfect breakfast for hot sunny days. You can also make it the night before and put it in the fridge overnight if you prefer having it cold or just don’t want to be bothered making it in the morning even though it only takes about 10 minutes to make if you soaked oats overnight. However, I know even 10 minutes in the morning can be a lot for some people so there’s always the option to make it the night before.

I don’t think I will ever I my whole life find a texture more perfect than overnight oats. I adore it! It's amazing! I have a few overnight oat recipes on my blog if you are looking for some and they all taste delicious! I can guarantee you will love it!

You might remember the first parfait I ever made on my blog and that was actually my first time ever making parfaits. I immediately fell in love with them and have been making them ever since. What I love the most about them is how easy they are to make, how customizable they are, the different textures you can play with and so on and on. I could talk about parfaits for the rest of the day but I think all you really want right now is the recipe so let’s just jump right into it!


CARAMEL OAT PARFAITS


| INGREDIENTS

  • ¾ cup oats
  • 2 tbsp chia seeds
  • ½ tsp vanilla extract
  • ¾ cup plant-based milk
  • 1 peach
  • 8 dates
  • granola


| METHOD

1/ OAT LAYER: In a medium bowl add oats, chia seeds, vanilla extract and plant-based milk. Mix until combined and well incorporated. Set aside for 20+ minutes or overnight. In the meantime, prepare date sauce and cut a peach into small pieces.


2/ DATE SAUCE: In a high-speed blender add dates and ¼ cup water. Blend until smooth.


3/ ASSEMBELING: In a glass add a layer of oats, peaches, granola and date sauce. Repeat until you fill the glass. Then enjoy!
