Lemon and Vanilla cheesecake - kids party food (no sugar)

This is one of the most loved @ kids parties ! Spread sliced berries through the mixture or add some melted chocolate to make it to die for.

Ingredients for the base

  • 40g desiccated coconut
  • 50g almond flour
  • 60g melted butter

How to make the base

  • mix the ingredients and press them into 12 little glass jars

Ingredients for the cheesecake

  • 125 ml water
  • 20g gelatine
  • 250 ml cream
  • 225 g cream cheese
  • 2 cups (500ml) buttermilk
  • 80 ml honey
  • zest of 1 lemon
  • 1 teaspoon vanilla extract
  • fresh berries to server

How to make the cheesecake

  • Pour water into a heat resistant bowl and sprinkle with gelatine. Wait for 5 minutes.
  • Pour the remaining ingredients into the bowl of an electric mixer and whisk until thickened.
  • Melt the gelatine mixture over simmering water until it's clear. Spoon a few tablespoons of the cheesecake mixture into the gelatine and mix well. Pour the gelatine mixture into the bowl and with the cream cheese and mix well.
  • Pour the cheesecake filling into the glass jars and chill in the fridge for at least 4 hours to set.
  • Serve with fresh berries.
