Quick 'n' Tasty Breakfast Muffins...they're healthy AND yeast-free, yay!

in #food7 years ago

Huh? An egg what? I know, egg muffin means something else in America - you're thinking McDonalds breakfast with a sausage patty, egg patty and a 'muffin' bread aren't you? BUT today I am going to show you a recipe that is not only healthier, but super quick and easy to make. Tasty too!

Please explain how this is a muffin...

It's called an egg 'muffin' because you bake it in a muffin tray (genius!) so it is muffin-shaped but not a cake muffin as you know it - is that a record for the number of times the word muffin has been used in a sentence?

Why do I care if this is yeast free?

For those of you that haven't already read my previous post, I indicated that our household recently underwent a diet tweak and we've tried to exclude yeast from our diet. I will do another post on this specifically later but in general, I've tried to make recipes that don't contain any flour (goodbye bread, pastries, cakes, biscuits) or fermented foods (soy sauce, vinegar, pickles). This was a great recipe I started making that we could both eat and hit the spot for breakfast hunger!

Recipe

Step One

Ingredients required - super simple and you probably already have these ingredients at home!

Step Two

Chop + dice everything up (except the egg, duh!)

Step Three

Combine in a bowl and mix - I also added some corn for juicy bursts of flavour :)

Step Four

Spray a muffin tin with oil spray and scoop the mixture into the muffin tin.

Step Five

Bake for 20mins @ 180C and mmm....smell that eggy goodness...

You basically made mini egg frittatas...

Not incorrect but how cute and fun are these little muffins? They took hardly any time to make at all, are super tasty and filling. I personally don't eat a lot for breakfast during the week and it's so easy for me to grab two and eat them on the way to work.

I eat them cold but you can even pop them in the microwave for a few seconds and have them warm.

Hope you guys enjoyed this recipe, let me know what you think and if you have any healthy breakfast ideas!

P.S. I am not afraid of criticism please tell me if this looks disgusting and you'd rather squish it with your dirty shoe and then run it over with your car than eat it. All feedback welcome :D

No doubt! Yummmm 😁 i had forgotten about these. Thanks for the resteem @coff33a

Hello friendo! I am glad I've been able to introduce you to this recipe. It is such a simple recipe, even if I'm tired and it's late on a Sunday I can quickly whip these up and I've got breakfast for the whole week!

I think they're pretty healthy, if you really want you could omit the bit of grated cheese I put on top to make it golden but I really only put the smallest sprinkle on each muffin, the rest is just a) egg b) spinach / other greens c) corn d) capsicum....ingredients that are all good for you.

Also thank you very much for the resteem, I really appreciate your support!! Let me know what recipe you'd like to see me make and I'll see if I can do it #challengeaccepted haha

Such a good reminder! Love egg muffins!! An eat-clean staple!! A great snack/ meal to have on hand. Nice to meet you @phamished! I enjoyed your offering tonight.

Thanks @yogajill, nice to meet you too! It sure is. I am all about healthy food but without sacrificing flavour or taste. These egg muffins I find are that perfect balance, let me know if you make them!

Yes they are! It's been so long since i made them! And, having a 13 year old son in the house who is growing a lot, i wonder if he will enjoy them! I will connect when i do make them 😊

I reckon if your son is 13 you could probably beef these up by adding bacon or ham - I omitted these as I was trying to keep it healthy but I am sure your son would appreciate the extra flavour and taste + energy boost so I’d add those if I was you!
