  1. The Beijing duck

Recipe:

Duck 2,5 kg
Soy sauce 2 snoop
Honey 2 snoop
Chinese spices 1 snoop
Pomegranates 1
Oranges 1

Preparation:

Wash the duck well, cut it in half. Cut the duck breast in several places 3-4 centimeters. Make marinade from honey, soy sauce, Chinese spices and salt. Rub both parts of the duck well into the marinade and leave for 10-12 hours.

Then bake the duck in a heated oven at 200 degrees for 1-1.5 hours. Decorate the baked duck with lettuce leaves, pomegranates and oranges.

  1. Pork ribs with sauce

Recipe:

dried paprika powder 65 g
brown sugar 55 g
salt 40 g
tablespoons of ground mustard seeds 2
tablespoons garlic pellets 2
tablespoon dried onion granules 1
teaspoon of oregano 1
tablespoon calendars 1
teaspoon of cumin 1
teaspoon ground chili pepper 1
teaspoon ground black pepper 1
of pork ribs 1.6-1.8 kg

Preparation:

First of all, we prepare a mixture of spices, mixing all the spices.

Dry the pork ribs with a paper towel and sprinkle with liquid smoke concentrate (about 1 teaspoon per rib strip).

Then the meat is thoroughly removed on both sides with a prepared spice mixture and placed on an aluminum foil lined baking sheet. The ribs are covered with other foliage foil and very carefully 'snapped' to prevent meat vapor and moisture from running out. We put the prepared meat into a 120 degree oven and bake for 2 hours.

After that we remove the top layer of foil and let the meat shake a little for an hour and a half. The pork ribs are roasted when there is almost no resistance when the toothpick is inserted.

Finally, we grease the barbecue sauce (homemade, according to my recipe) and fry / caramelize for another 10-15 minutes.

Recipe:

grams pork, minced 250
grams tiger prawns 250
tablespoon white wine vinegar 1
white onions, finely chopped 3
liters chicken stock 2
inch piece ginger, finely minced 1
long red chilli 1
cloves garlic, crushed 3
cup sliced mushrooms 1
tablespoon cornstarch 1
cup fresh lime juice 1
tablespoons soy sauce 2
tablespoons vegetable oil 2

Preparation:

In a large pot, place the chicken stock and bring to a boil. Add the mushrooms, garlic, ginger, onions and chilli. Lower the heat, cover, and let simmer.
While the soup is cooking, heat the oil in a frying pan and fry the minced pork and the tiger prawns for 1-2 minutes. Season with salt and pepper and then squeeze half the fresh lime juice on the pork and prawns. Add soy sauce and let cook for another 1-2 minutes. Add to the soup immediately once cooked, along with the cornstarch and stir. Squeeze the rest of the lime into the soup then serve.

One serving will require:

small chili peppers (there are no such in Lithuania, so it is best to use a piece of traditional chili) 1-3,
green uncooked green beans 3 to 4
cherry semi-cut tomatoes or 1/4 to 1/2 plain tomato cut into pieces 3 to 4,
garlic cloves 4-5,

teaspoon of ground peanuts 1,

teaspoon of dried shrimp 1

teaspoon of palm sugar (simple sugar or honey can be used) 1,

teaspoons of fish sauce 2,
1 tablespoon of lime juice (you can replace it with lemon juice),
Preparation:

a handful of thin papaya cut into thin straws mixed with several strips of fresh carrots cut.

If you have a large mortar, make salads there. If you have a small one, start with chili pepper and garlic. I mainly put two small peppers, but I have to sweat well afterwards. So if you do not like sharp, treat with pepper more carefully. Throw them in the mortar and rub until the garlic and pepper release its aroma and sharpness.

Then throw the green beans cut into pairs of pieces a couple of centimeters in length and rub them a little to release the juice. Add palm sugar, add fish sauce, lemon juice and mix everything.

Put the tomatoes together and stir in a little more. If the mortar is small, put the papaya and carrot pieces in a comfortable bowl, pour the sauce, sprinkle with shrimps, broken roasted peanuts and vigorously stir to spread papaya, softened and rolled over.

Serve immediately, preferably with boiled sticky rice. These salads are also suitable as a garnish on a grilled chicken or pork. You can even sprinkle lettuce with fried peanuts - they aren't too much.

Recipe:

Potatoes 10
potato starch 2 spoon
egg 1
Boiled meat 200g
Onion 1
Salt (by taste)
Black ground pepper (by taste)

Preparation:

Boil the potatoes and grind. Knock the egg, add the starch, salt and knead it all well.
Boil the cooked meat, add the fried onion, add salt and pepper. Continue as traditional bones.
Cook for 5 min. Bake the roasted bones, taste it with crackling and sour cream.
