Broke dudes noodles that happen to be Vegan. This meal is asian muscle approved!
Have you ever just sat at home hungry as F@$%, but barely have enough money to feed yourself. Or maybe, you just don't have enough money this week , so you subject your health to a quick and cheap alternative with fast food chains that sell you food that has little to no nutritional value loaded with empty calories packed with simple carbs and fills your stomach up with grease. Im a college student, so I know the struggles of money like alot of people.Its a real struggle, but one that can be helped with delicsious foods that are inexpensive. Besides this, Im a plantbasedjunkie, so i dont eat anything with animals products in it, which drives my cost of food up. Here is a quick and easy meal for anybody looking for a decent meal for not alot of money at all. I got this recipe from a really good friend of mine, who grew up in the rural parts of vietnam, so I hope you enjoy this meal!.
INGREDIENTS:
- 1/2 package of spaghetti noodles ( whole wheat or even rice noodles work just none with egg unless u want)
- hand full of Organic spinach (1.50-1.99)
- 1 teaspoon Sea Salt or regular salt whatever is in your kitchen.
- 1 teaspoon organic raw cane sugar or just regular sugar is fine too whatevers in your kitchen.
- 1/2 tablespoon - 1 table spoon soy sauce (depending on your taste. i just splash some one for 3 seconds)
- 1 tsp Olive oil ( any oil is fine, whatever you have will work too)
Making the Magic Happen!
Boil water in a pot and then place about a half a package of spaghetti noodles an cook them according to the package. Abut 9-13 minutes. Keep checking them so you DONT over cook them because they can become mushy later, so cook them until there are soft but not to soft. Sightly under cooked.
Drain the spaghetti noodles and then run them through cold water, until the water flows through the bottom is cold. Allow the noodle to sit aand drain for an addition 2 minutes. At this time, put 1 to 1 and a half teaspoons of olive oil in a wok ( no wok, okay no wok you can use a sauce pan) allow the oil to heat to a boiling point.
Throw the noodles into the fire (plop!) Now take 2 forks and pick up the noodles like the crane game at the pizza joint, you know the one that you put in 3 bucks but never get a stuffed animal..lol.. use the forks to mix the noodles usuing that same crane method shown in the picture.
After a few mixes with the forks, throw in the tsp of salt and sugar and continue to mix up your noodles cooking the noodles for 7 minutes

Now put the soy sauce in and continiue crane mixing for an addition 5 minutes. At this time, you may put in the spinach. *** you can also throw in baby bok choy, cabbage, and bean sprouts*** All of those vegetables taste really good in this dish and they dont cost very much. now just continue mixing until the spinach wilts alittle bit, and serve hot with Suracha sauce or chilli paste.
There you all go! I hope that you enjoy this meal its really cheap and easy to make. It seems and looks difficult , but once you do it a couple times, you will be a pro whipping up noodles in no time! I make this on those days i dont have money , but I am very hungry.
