Vegan Farfalle in Garlic Cashew Cream Sauce

Have you ever thought about trying to become a Vegan? Has it ever crossed your mind that maybe you would at the least like to try  vegan meal, except you don't know how to make one? Unless its toast with jam, or oatmeal...j.k.. If you have every been curious to try a dish, I have posted this easy to make Vegan dish that has been altered slightly for anybody looking to try new foods, and for anybody looking to eat more healthier. Try it what do you have to lose? Note: Everybody has different taste some people like more salt and less pepper , others like more pep less salt. what have you this dish is easy to make and in the end you can salt and pepper it as much or as little as possible. In this recipe you will need:

1 Pound of Farfalle pasta (one box)

Olive oil

1 Large Onion

5 garlic cloves minced ( i buy a big jar of minced garlic 1/2 tsp = 1 clove)

1/2 cup raw cashews ( i use the halved ones because they are easier to blend)

2 cups of water

1 tablespoon lemon juice 

2 tsp salt

1 pound of mushroom ( i buy pre sliced already in bag)

salt and pepper 2 taste

First: Bring a large pot of water to a boil and cook your farfalle according to package and drain.

Second: heat a splash of olive oil in a sauce pan and throw in your chopped up onion and let that cook for about 3 min.

Once those onions are slightly browned  add the minced garlic; heat and stir for additional 1 min.

Third: In a blender, Pour the 2 cups of water, 1 table lemon juice, 2 tsp salt, then the onion mixture with garlic, and lastly put the cashews in and blend until real smooth and creamy (about 3-5 minutes depending on your blender)

Meanwhile, the blender is working its magic, heat a splash of olive oil in a sauce pan and then throw those mushrooms in the hot fire and watch these babys sizzle. Add pepper to the shrooms to give them a nice flavor.(not actualy 1 pound of mushrooms because this is all i had in fridge) by all means you could even use more!

Then, After about 5 minutes of mushroom cooking, go ahead and pour the cream sauce all over those mushroom and cook for about 5 minutes just until the cream thickens up alittle bit, but make sure to stir frequently because the sauce can stick to the pan if you leave it alone.

Lastly, turn off the heat and stir in your farfalle pasta. Make sure you stir this up real good get it evenly coated. Finally,  serve it with pink salt, pepper, and/or  chilli flakes. Carb-up and enjoy.

If you want to heat this dish up later , just add alittle bit of almond milk to it and heat it up for 4 minutes. Also, you can put some of this in a container with almond milk and spinach and take this to work for a quick meal and satisfiying meal.

Nice, I am not vegan by any stretch but like non meat dishes and get inspired by some vegan/vegetarian dishes

Thank you for the comment. The main thing with vegan/vegetarian dishes is getting the taste right, if the taste isnt good , then people wont want to eat it.

Thank you for the comment! I hope your friend enjoys this meal. For this dish , i used Barilla from staters. its only $1.50 made from wheat and has no egg or milk ingredients.

I got Barilla like you said. And I used coconut oil instead of olive oil, and lime juice instead of lemon (because that's what was in my fridge).
My husband tried it and said the flavor was pretty darned good considering there was no meat in it. Ha ha.

This looks awesome, I want to try it but it is a little high fat for my diet. Do you have a substitute for the cashews and oil?

Thank you!... For the oil you could probably just use water , or alittle bit of vegetable broth. The cashews its hard to say, but my guess would be silken tofu. What kind of diet are you currently on?

I don't stick to it like I should, but when I am eating right I eat a HCLF diet.

Carbs are the bodies main energy source so thats great to eat a high carb diet, but to lower your fat intake, i would recommend eating less animal base products because they are all very high in saturated fats.

I don't eat any animal products, but I know my body, I am really sensitive to fat and I eat it, I get fat fast.

Wow that sounds freaking amazing! I never knew you could make a cream sauce with cashews. I will be sure to try this out!
