Summer Strawberry Salsa

I bought 10lbs of strawberries at a roadside fruit stand a week ago, and had to come up with recipes to use them up. Well, technically only half of them, because my family and I ate half before we got home. I came across a recipe on Pinterest that I thought looked amazing. st.jpg

Strawberry Salsa:
1 pound strawberries, diced (~2 cups)
1/4 cup red or green onion, finely diced or sliced
1 jalapeno, finely diced
1 lime, juice and zest
2 tablespoons cilantro, chopped
salt to taste
Mix together and put in the fridge.

I marinated some chicken in lime juice, then grilled it.
baked some fresh green beans with garlic and Parmesan cheese
and mixed some fresh broccoli, cauliflower, and cubed cheese in some ranch dressing
Made for a perfect summer meal that all 6 of my family members devoured.

I had never heard of strawberry salsa. Awesome!

My personally favorite is mango-pineapple salsa.

LOL! Yes, we usually have a quart of strawberries eaten by the time we get home. They are so juicy and sweet this time of year. Love your recipe and the meal looks wonderful! Enjoyed.
