Cream of Jerusalem artichoke with eggshell, radish, roasted sunflower, dill and chives oil🥘😋

Welcome my dear steemians!

I present to you a very tasty soup, one of my favorites - cream of Jerusalem artichoke, of course in my vegetarian interpretation.😉

I always season it very gently, so that it is good to feel its proper aroma and not to overwhelm Jerusalem artichokes with too many strong spices.
Its taste is unique, and my proposal additionally gives it a specific character and a quite interesting look.

Ingredients needed for two portions of cream:

Cream:
1 kg of Jerusalem artichoke
1 onion
2 cloves of garlic
50 ml of dry white wine
100 ml coconut - rice drink
1 tablespoon of oil
1 flat teaspoon of herbal pepper
a pinch of turmeric
salt to taste

Additions:
2 "happy" eggs
1 tablespoon of wine vinegar
3 radishes
1 handful of sunflower seeds
a dash of dill
a pinch of chives
20 ml of linseed oil

Execution:

Soup:
On the oil, fry the diced onion, then add the chopped garlic, fry for a while and then pour everything around 1 liter of water and wine (if the soup will be too thick, you can add more water, necessarily boiled).
We add peeled and cut into pieces Jerusalem artichoke, cook everything until tender.
When the vegetables are soft, season the vinegar and wate it with a coconut-rice drink, then mix with a blender until a smooth cream is obtained.

Eggshell:
Pour the egg (carefully and slowly) into a saucepan with water and vinegar.
We believe that the water will be boiling, but it will not boil - we blanch the egg in water for about 2 minutes, then pull it out gently using a spoon.

Additions:
We cut the washed radish into eights and fry in a pan with a small amount of oil.
Roast sunflower seeds.
Mix with a blender: dill, chives and linseed oil, so as to obtain a fairly uniform, green liquid.

That's all!
Soup pour into a plate and decorate with pre-prepared additives (egg sprinkled with freshly ground black pepper).

The cream looks great and tastes even better than it looks
