Calamari Ripieni con Crema ai Peperoni
Hey Steem! My name is Romy and I am an Italian living in Venice Beach, CA. I love to cook and wanted to share some of my recipes on Steem! Here is the first of many - welcome to Romy's Recipes!
Today I'll be sharing one of my favorite Italian seafood recipes - CALAMARI RIPIENI con CREMA AI PEPERONI
Step 1 - Prep for CREMA AI PEPERONI
a) In medium pot, bring water to a boil and add peppers, onions, potatoes, and carrots. Keep on medium heat.
Step 2 - THE CALAMARI MIX
a) Remove (cut) tentacles off squid cut into fine pieces. Make sure to separate tentacles from body, which will be used later and is very important!
b) Cut up some breadcrumbs into squares, keep separate.
c) Finely cut up parsley and capers, keep separate as well!
d) In pan, heat up a bit of olive oil with a clove or two of garlic. Once hot, add in the cut-up tentacles and cook for 2 minutes.
e) Add parsley and capers, followed by bread crumbs
f) After a few minutes, add a splash of white wine. Make sure everything mixes nicely and the bread soaks in the wine!!
g) Remove pan from heat - let cool a few minutes and transfer to a bowl.
h) Once cooled, add a hint of parmesan cheese, salt, pepper, and one egg! MIX WELL!!
THE MAIN MIX IS READY TO GO!
Step 3 - FILL THE CALAMARI!
a) Carefully take body of calamari (which was separated earlier) and fill with above mix.
b) Be careful not to fill too much and break the calamari! Use a toothpick or something similar to help keep it closed!
STEP 4 - COOK THE CALAMARI!
a) Once again, pre-heat pan with a touch of olive oil.
b) On low heat, add the calamari to the pan. Cook for a few minutes until outside gets a bit brown/crispy!
STEP 5 - FINISH UP THE CREMA ai PEPERONI
a) At this point, the ingredients for the cream (which should be boiling in the pot still) should be cooked and ready to go - remove pot from heat!
b) Transfer vegetables from pot into mixer/blender, and blend until you get desired consistency. Use the same water from the pot to make more liquidy!
c) Add a bit of salt, pepper and parmesan for taste!
