Bettelman (typical Alsatian dessert)
A dessert that "holds to the body" and fills the small hollows between two meals. Essentially made with black cherries. You can put other fruits, but they have to be juicy, since it is the juice, which infiltrates into the dough, gives it all its flavor.

INGREDIENTS
- 800 g to 1 kg black cherries (depending on size)
- 5 little stale milk loaves (or a bit of stale brioche)
- 50 cl of milk
- 4 eggs
- 125 g of sugar (+ one sachet of vanilla sugar)
- 1 kirsch liqueur glass (optional)
- cinnamon
- breadcrumbs
- Hazelnuts of butter
PREPARATION
STEP 1
Preheat oven to th.7 (210 ° C).
STEP 2
Heat the milk, and pour it on the rolls, to soak them. Crush them with a fork (it is best to remove the crust).
STEP 3
Add the sugars and cinnamon, stir, add the eggs one by one, stir, add the kirsch. Mix well, add the pitted cherries.
STEP 4
Butter a cake pan, or a rectangular dish (pyrex - porcelain - terracotta) and pour the preparation there.
STEP 5
Sprinkle with breadcrumbs, sprinkle with hazelnuts of butter, then bake for 1 hour.
STEP 6
This dish can be eaten hot, warm, or cold, and keeps for several days.
