Easy, Low-Calorie Chicken, Mushrooms, and Veggies!
This is one of my go-to meals lately with a LOT of variations.
We prep onions, different bell peppers, zucchini, and crimini mushrooms during the week, and in large quantities (we do have a family of 7...).
For this particular meal, I took about 4oz of chicken breast, sauteed, seasoned, and then set aside.
Then took a bit of vegetable broth in a pan (just a little more than covering the bottom), and heated to about boiling. Added onion, peppers, and chopped zucchini, and sauteed in the broth (in place of any oil). Once mostly softened, added mushrooms, and once nearly done, added a big handful of baby spinach and the chicken previously cooked.
Delicious, filling, and low-calorie.
Seasonings? A little salt and pepper, thyme, and red pepper flakes.
