Chicken & Rice Fajitas in foil
Please forgive me as I know everyone enjoys pictures of the entire process!! I was in such a hurry, and didn't think about it!
Brown minute rice
Chicken fajita seasoning
Chicken breasts
Yellow peppers
Bell peppers
Onion
Avocado
Lime
Cilantro
Shredded cheese
My recipe makes 2 portions - you can add however much of whatever!
The first thing that I did was put a cup of rice in a bowl with a cup of water and added 2 tablespoons of fajita chicken seasoning.
While that sits - chop up 1 green bell pepper, 1 yellow bell pepper, and half of a yellow onion. (yellow/white/red whatever you like)
Preheat oven to 400
Cut 2 sheets of foil and spray with olive oil or any nonstick spray.
Strain the water out of the rice and divide the rice evenly between foil sheets.
Season the chicken breasts with chicken fajita seasoning and put on top of the rice.
Divide the peppers and onions and arrange around the chicken breast.
Top with shredded cheese (Mexican style)
Bake for 35 minutes
When it's done, open the foil and add lime juice, chopped cilantro, and sliced avocado!!
