Moroccan Couscous Recipe*
Ingredients:
- 2 cups couscous
- 2 cups water or chicken broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 3-4 carrots, peeled and sliced
- 2-3 zucchinis, chopped
- 1 cup chickpeas, cooked
- 1 cup raisins
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh parsley or cilantro, chopped (for garnish)
Instructions:
Prepare the couscous: In a medium saucepan, bring the water or chicken broth to a boil. Add 1 tablespoon of olive oil and 1 teaspoon of salt. Remove the saucepan from heat, stir in the couscous, cover, and let it sit for about 5 minutes. Fluff the couscous with a fork.
Cook the vegetables: In a large skillet, heat some olive oil over medium heat. Add the chopped onions and minced garlic, and sauté until they are translucent and fragrant. Add the carrots and zucchinis, and cook until they are tender.
Add the spices and chickpeas: Stir in the ground cumin, cinnamon, turmeric, ginger, and coriander. Mix well to coat the vegetables with the spices. Add the cooked chickpeas and raisins, and stir everything together.
Combine couscous and vegetables: Add the cooked couscous to the skillet with the vegetables and mix until everything is well combined. Adjust the seasoning with salt and pepper to taste.
Garnish and serve: Transfer the couscous mixture to a serving dish and garnish with freshly chopped parsley or cilantro.
