Amazingly delicate, fragrant, thick and delicious lemon cream. Perfectly suitable as a filling for baking (rolls, croissants, pies, tartlets, cakes). In addition, the recipe for this English dessert cream (Lemon curd) is surprisingly simple and nothing special for its manufacture will be needed.
Ingredients:
- 1 egg
- 50 grams of sugar
- 15 g of softened butter
Preparation:
1. With one - two lemons (to taste), we rub the grater into a cup of zest.
2. There also pour 200 grams of sugar and squeeze out the juice from 4 lemons.
3. Mix everything with a spoon.
4. In the other cup with a fork, beat the eggs (not to foam!).
5. Mix both mixes and mix, but without fanaticism.
6. Let's leave for 30 minutes, so that the peel gives away its fragrance.
7. Through a sieve filter into a saucepan, in which we will prepare the cream. To do this it is necessary to get rid of lemon seeds, under-milled proteins, which, when heated, can curdle, and peel.
8. We put the saucepan on medium fire and begin, without ceasing, to stir the cream.
As soon as the cream starts to thicken, add butter to it and mix again until it thickens.
9. The whole process of stirring will go away for 4 minutes. In the beginning, the cream will remain liquid for a while, and then it will start to thicken rapidly.
10. We pour into jars. We cool it on the table and store it in the refrigerator, where it can stand up to 7 days.
