Huge amounts of calories, true, no nutrients? You are probably talking about highly processed oils, cold-pressed oils have actually more nutrients because they are condensed. For example 100g of olive oil has 14 mg of vitamin E while 100 g of olives have 2.4 mg of vitamin E.
The oils lack the fiber though.
Roasted chickpeas myself in spices a couple of days ago, so good.

No need to bent over backwards, you were right at being easy on the oils and that is all that really matters ;)
