LAZY KITCHEN🍳: SWEET POTATO BURRITOS
A gluten free tortilla burrito is coming your way soon enough, but for now let me introduce to you guys the sweet potato burrito. 😏 This is a great way to spice up your sweet potato. Sweet potato is one of my favourite vegetables. It's so sweet next to a savoury meal such as chicken or steak. I like them cubed, as fries, in the skin, basically in any form. It's also really good for you. It has a lot of benefits, such as the fact that it is rich in vitamin D, which not a lot of food are. For people with Vitamin D deficiencies, like me, it's the perfect thing!
What you'll need:
3 Large sweet potatoes
50g of mince
15g Black beans
10g Sweet corn
10g Chopped tomatoes
1 tbsp Salsa
10g Chopped red onion
1 tsp Taco seasoning
A pinch of salt
1 tbsp Guacamole
1 tbsp Sour cream
So first off, you need to put the sweet potatoes in a clay pot or a microwavable tub and nuke it for about 7 minutes. (Alternatively you could bake them or boil them, but that may take quite a bit longer.) Make sure there are holes poked into the sweet potatoes with a fork, before nuking them. While it is in the microwave, prepare a pan on the stove and put the stove on medium heat. Make sure the pan is greased and then add the mince, black beans, sweet corn, chopped tomatoes, chopped red onion, the taco seasoning and the salt into it. Saute that for about 5-7 minutes. (Until it is done.)
Then take the sweet potatoes out when they are done and scoop out some of the sweet potato. Make sure to leave a thin layer of sweet potato in the skin. Mix half the sweet potato mass into the mince mixture and put it on low heat for about a minute or 2. Then scoop the mince mixture into the sweet potato skins and finally top it off with the salsa, guacamole and the sour cream. And then you are done. It's really simple and quick. 😉
