Leche Flan: A popular Filipino dessert
My baked leche flan. I don't know what went wrong and it looks like that but the taste? Perfect! Just like the leche flan I know way back home.

Ingredients:
8 eggs and we will be needing just the egg yolks only
1 condensed milk
1/2 cup sugar for the caramel on top
1 tbsp. vanilla extract
1 cup evaporated milk
Procedure:
Let's make first the caramel. Put the 1/2 cup sugar in a pan, let it cook in a low heat until it caramelized.
For the meantime, beat the eggs and separate the yolks from white. You can make it meringue if you want afterwards. Pour the evaporated milk and stir it well.
Next put the vanilla extract.
Pour the condensed milk in the mixture and stir it well until there are no lumps.
Mix! mix and mix.
And now our caramelized sugar is ready. It should be golden brown. Maybe I over-cooked it this time.
Pour it in an aluminum tray or llanera. Be careful because it's hot!
Pour the mixture into it.
Cover it with aluminum foil and put it in a bain-marie and then put it in the oven and bake for 1 hour and 15mins. in a 220 degrees temperature. Check it with a toothpick and when the toothpick comes out dry, then it's good to go.
Let it set for a couple of hours. Mine was set overnight. I hope you did enjoy this simple recipe.
