Linguine with salmon and lime: easy and tasteful pasta!

I don’t know if I have told you in the past, but I prefer to eat fish rather than meat. In my home, we have a great respect to fish dishes and seafood; I mean, you can eat seafood that literally brings the entire taste of the sea bursting in your mouth! Who can resist that?

This is a very easy pasta that I helped my mother make the other day that she wanted to please some friends of hers. The portions are for four people. Voila:

Ingredients: 500gr salmon cut in cubes, ½ kg of frozen broccoli (in pieces, if not, then once they are being cooked, they can be cut), 1 lime zest, 70-100ml olive oil with garlic scent, 1 big onion cut into pieces, 50 gr of butter, 1/2kg of linguine pasta or whichever you like (like spaghetti or tagliatelle), salt and pepper to taste

Boil the pasta in a deep pot with 1 ltr of salted water for 10 minutes; we don’t want the pasta to be fully cooked. I don’t drain the pasta as I want to keep the liquids for my cooking.

In the meantime, in a separate, preferably big, pan, I sauté the onion with the salmon for few minutes until brown. I put the frozen broccoli and let it simmer for a further 8 minutes. Once the pasta is ready, I don’t drain them. I ‘fish’ the pasta out from the pot with a perforated spoon and put it in the pan. If there are a few liquids too, it’s fine, as we want to further cook them in the pan. I stir everything to become a nice mixture. If I need extra liquids, I use the boiled pasta water. In the end, I put the butter and mix well. I don’t use any kind of cheese, as I think that fish and cheese don’t match well, but feel free to add some!

I serve and on top I drill the lime zest. The whole procedure is really easy. It shouldn’t take you more than 15-20 minutes.
