STEEMIT CULINARY CHALLENGE #39: "Buffalo Chicken Wings (cauliflower)"

Hello everyone

Tio Luis, here again, to show you some love <3

I wish you the best of the best for this upcoming week and I hope everything is going great for you

For this time for the little fellas since I don't have one yet but there is one on the way

I tried to replicate something I have seen before but I couldn't pull up a recipe

My computer was extremely slow I have no idea why (Maybe I need a new one).

I will make fake chicken wings, which are perfect for that little one around 1year.

Discover he can handle food by himself, Just be careful haha or there will be orange stains everywhere!

I am surprised at how good this is! I love them and this was perfect because I had that cauliflower

in the fridge and I was waiting for some inspiration to do something with it.

For this we need:

1 Cauliflower

2 Carrots

1 Orange

Simple isn't it?

We will start by cleaning the cauliflower and getting the little flowers

Try to make them something easy to handle, that you can get 1, 2 or even 3 bites out of it

Nobody want's to struggle with mini pieces of cauliflower.

Next, we will blanch it which means just boil it for couple minutes.

We don't want it to fall apart but we don't want raw cauliflower for our little ones

It is usually pretty heavy on your body if you eat it raw. We have a hard time to digest it.

In order to eliminate that I decided to blanc it for around 5 minutes since I have no way to steam it

I would much rather steam it but maybe if you can do it home :)

Remember don't let it fall apart

Next, we will fry it a little bit. I just used the same pot added some olive oil and throw the cauliflower back in.

You want to get that little color that you see on the wings... after all who wants to eat wings that

don't even look like wings?

CRAZY!

For the sauce we will need:

The juice of 2 carrots and an Orange :D

Fun ha did you think I would give buffalo sauce to the little ones? I might if I make my own hahaha

But not this time, we will keep the spices out of it since this is kids food, not tioluis food :D

This is an Omega masticating juicer which gives cold press juice. As a matter of fact this information

does not even matter because we will cook this down. Anyway if you ever pretend to juice make sure it is cold press

Organic. Always because if you juice something you juice the pesticides with it and liquid

form is easier to get into your system also cold press juice preserves all the enzymes and

nutrients from whatever you juice different than heat treated juices (pasteurized)

that kill everything in the process.

Once we get all that lovely beautiful juice we have to reduce it down!!!

and by reducing it down I mean take liquid out of it (mostly water) This is something I always

put double thoughts about reducing if we are only taking water out. We can always add it too

So don't worry if it dries too much just add a little splash of liquid in there and bring it back to life

and the consistency you desire :D

We toss out cauliflowers in the "buffalo sauce" out of carrot and orange juice

and let me tell you this sauce taste incredible! I had no idea it will be this good

and never forget to add the sides, wings with celery and carrot sticks of course!!!

no ranch dressing for me, sorry but I decided to put a side of cashew cheese with it :)

Also made by me in the past weeks I like my cheese to sit in the fridge and gain flavor over the week.

Soak cashews, add water salt lemon juice and a little of probiotics. Everything on a high speed blender and bam!

Cashew cheese!

This was delicious it is weird you can even taste some of deep fried once you eat the cauliflower with those black bits on it and tossed in the sauce, ahhaha totally a success :D

Awesome recipe @tioluis! I love how healthy and easy it looks, and a great idea for kids. I have been meaning to try buffalo cauliflower wings for a while, will have to give this a go :)

That's a really great baby food idea! Love it @tioluis! I bet it tasted yum. I have to make this soon. Since I saw this recipe idea to replace chicken with cauliflower I was completely into it. But I didn't have the chance to try it yet. :)

I am a fan of cauliflower. Unfortunately my daughter does not like much, but I can eat her for two))) Beautiful color and I imagine what aroma. I like.

Fantastic creation @tioluis, I really love the sound of this one! As you say it's very easy to prepare, and I imagine it tastes awesome. Often simple gives most yum! And with that cashew cheese too... mmmmm.

I love your choice of ingredients... very nutritious and also cauliflower is a good choice for infants in terms of taste, texture, versatility and nutrition. It's not too strong flavour, and so can be mixed with other flavours easily. I am going to try that carrot & orange sauce for sure, I know my boy will love it! Personally I put spices in my baby's food from about 8 months onwards, so there's no reason to avoid the spice (maybe start mild and work to hot!) but spices are great for developing the pallet and leads to less fussy children later in life if they try many different things as babies. The bright colour of this food will be appealing as well.

I'm happy to see you encourage people to use organic produce too, as you're right, the baby ends up taking a dose of toxins with every bite of non-organic produce... eek! Sure your baby will have no complaints with you to prepare his meals! Wonderful entry, good luck!
