Poulet de Cornouaille

Ingredients:

  • 4 chicken breasts
  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 2 cloves of garlic, minced
  • 1 teaspoon of fresh thyme
  • 1/2 teaspoon of sea salt
  • 1/4 teaspoon of freshly ground black pepper
  • 2 tablespoons of white wine
  • 1/4 cup of heavy cream
  • 1/4 cup of chicken broth
  • 2 tablespoons of chopped fresh parsley

Instructions:

  1. Preheat oven to 375°F.
  2. Heat olive oil and butter in a large oven-safe skillet over medium-high heat.
  3. Add chicken breasts and cook for 3 minutes per side, or until lightly browned.
  4. Add garlic, thyme, salt, and pepper and cook for 1 minute.
  5. Pour in white wine and cook for 1 minute.
  6. Pour in heavy cream and chicken broth and bring to a simmer.
  7. Place skillet in preheated oven and bake for 20 minutes.
  8. Remove skillet from oven and sprinkle with parsley.
  9. Serve hot.
