Today on our dinner table: ratatouille 🥘
Ratatouille
Ingredients:
- 2 tablespoons of olive oil
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 large eggplant, diced
- 2 zucchini, diced
- 2 large bell peppers, diced
- 2 tomatoes, diced
- 2 tablespoons of fresh basil, chopped
- 1 tablespoon of oregano
- Salt and pepper, to taste
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the eggplant, zucchini, bell peppers, and tomatoes and cook for 10 minutes, stirring occasionally.
- Add the basil, oregano, salt, and pepper and cook for an additional 5 minutes.
- Serve warm. Enjoy!
