Fried Seabass with Homemade Tartare Sauce and potatoe wedges

Aloha seafood lovers and food loving Steemians in general.

Today’s menu is fried seabass with homemade tartare sauce and potato wedges.


To make it happen, you’ll need the following:
• Seabass fillet
• Potatoes
• spring onions
• paprika

For tartare sauce
• Mayonnaise
• Pickled cucumbers
• Shallots
• Capers
• 1 lemon
• parsley
• salt & pepper

Right, got all that? Good! Let’s jump to it.
It’s really easy and really tasty! So, without further ado...

Seabass fillets fry on medium heat pan on both sides. If you like the outside to be nice and crispy you can add little bit butter and fry on a bit higher heat. That’s how I like to do it at least.
Potatoes - cut them in equal(ish) sized wedges. Season with salt, pepper and paprika. Pop them on baking tray with a splash of oil. Mix through and bake in oven for ~ 45mins @ 180*C or till they nicely cooked through. Whew...Seabass done, potatoes are going. Now it’s time for tartare sauce :)
For tartare sauce grab a bowl (depending how much you want to produce), finely chop pickled cucumbers and about half of that amount of capers. Do the same with shallot(s). Pop them in a bowl, add some mayonnaise (I’d go about double the amount of mayonnaise of what you had of chopped cucumbers). Juice a lemon, season with salt, pepper and finely chopped parsley. Mix through. Got it? For better tasting tartare leave it to hang in a fridge for a bit, it’s well worth it (so it’s advisable to make the tartare a bit in advance).
Right, all well and good?
Time to plate it
Pop your nice Seabass fillet on a plate (optional: garnish with spring onion), add a heartsome amount of potato wedges, and a dollop of your finest homemade tartare sauce.
