How to Make Chicken Soup @ Home -- Coronavirus Comfort Food Recipe (w/ pictures)

Preparing food during these days of Corona Virus Lockdown has almost become a sacrament.

To begin with, food is scarce, we are not encouraged to go out often & there is a new heightened awareness/gratitude for what sustains us.

Little is more comforting & healing than chicken soup, for the mind and body.

So, today's dinner is homemade chicken soup. For that, I took out some chicken & assembled my ingredients: onions, celery, carrots, sweet potatoes, green pepper, cabbage & broth.

Use what you have; I used half an onion, a full green pepper, half a cabbage, one sweet potato. But, you might omit something here and, for example, add garlic or beets, if you like.

Chop everything in chunks the size you prefer to chew, throw in a pot and cover your ingredients with water or broth (or both) as I did. Now, add salt, pepper a dash of olive oil & season to taste.

Next, heat the healthy mix, placing your chicken on the bottom, on medium-high, until you bring to a boil. Stir, thoroughly, cover and simmer on lowest temperature for around 10 minutes.

All in all, with prep time, this wonderful meal should take you half an hour or so -- from counter, to stove, to plate —- depending, of course, on the quantities you use.

Turn off heat and allow to sit for another 10 minutes or so, then serve. Because we happened to have a small amount of egg noodles, we added this to the mix, when it was ready (boiling it, separately).

Finally, I recommend adding lemon juice, if you have it, but it's not necessary.

That's looking so comfort food. I like chicken soup too. Usually, I will saute the chicken with oil and garlic first until all the water inside the chicken meat drain out then I add in water and other vegetables later. Nice recipe you share. I guess we all have different style of cooking our comfort chicken soup 😊
