Vegetable Lasagna-Did Not Miss The Meat!

A classic lasagna is not complete without the amazing meat sauce and delicious ricotta, and some even go as far as to say that a lasagna is not a lasagna without some sort of meat.

After making a change to my lifestyle and trying to cut down my daily carb intake to lose some weight, I stopped eating a lot of the meals I used to eat previously. But, my birthday rolled around, and a cheat day was in order.

I'd been dreaming about lasagna for a while, so I knew that was one thing I had to make for my birthday. But with all the other extremely unhealthy things I was going to be making that day, I wanted to make a change to the lasagna for my body's sake. So off to Google I went.

When I first came across a vegetable lasagna recipe, I was very underwhelmed. Vegetables are good and all, but in a lasagna?? Then I read a lot of reviews on said recipes, and all of them said great things, many saying that the meat, while great in a lasagna, was not necessary to make it delicious. And they were right.

I used zucchini, green and red bell peppers, yellow squash, onions, and spinach in my lasagna. I cooked down the bell peppers and onions first, then added the zucchini and squash to cook for a bit. Then I added my homemade marinara sauce and spinach to the mixture and let it simmer for a minute, then assembled my lasagna. I also left out the ricotta mixture and just used mozzarella cheese because, lets be real, I'm poor and ricotta is expensive, and also to cut down the calories a bit.

I loved the sh*t out of this lasagna. It was gone faster than anything else I made (well, except for the garlic bread. Cuz garlic bread), and I can't wait to make it again.
