Emoji Cheesecake Recipe
A picture tells a thousand words. That’s why emojis are so good. Which one do you use the most? For me, it is definitely the smiley face. Have fun making these for your friends. They will make them smile.
To make the emoji cheesecakes you will need
(makes 8 cheesecakes, my individual tin size was 3/4 cup or 190millilitres (6.42 fluid ounces))
Cheesecake base
200g (7.05 ounces) plain sweet biscuits
4 Tbsp or 52g (1.83 ounces) butter
Cheesecake Filling
720g (25.4 ounces) or 2¾ cup plus 1 Tbsp cream cheese
2/3 cup plus 2 tsp or 153g (5.4 ounces) sugar
5 tsp or 15g (0.53 ounces) plain or all purpose flour
2 eggs plus 1 egg yolk
1 tsp vanilla
5 tsp or 25millilitres (0.85 fluid ounces) cream
yellow food colouring

non-stick baking paper
compound milk or dark chocolate
compound white chocolate and blue and red oil-based food colouring
Preheat your oven to 160C (320 degrees Fahrenheit)
Then to make the base put the biscuits into a bag and crush them with a rolling pin.
Tip that into the melted butter and mix in well.
If you are using a loosely based in place a piece of foil over the top and make sure it is up to the top on all sides. Then add the base back into the tin.
Place a scoop of crumbs into each tin then using something flat push the crumbs down into the base.
For the cheesecake filling place the cream cheese and sugar into the bowl of your mixer. And mix until it is smooth.
Swap to the whisk attachment and add in the eggs, cream, flour and vanilla. Whisk it on high speed until it is fluffy.
Add in some yellow colouring until you get that emoji yellow colour.
Pipe the mixture into the baking tins. Then tap each one on the bench to smooth out the tops.
Place them all into a large baking dish. Then carefully pour in some boiling water to about halfway up the sides.
Bake for around 15 minutes. Keep an eye on them because you don’t want them to brown on top.
Once they are cooked let them cool then remove from the tins as shown in the video. If you are not using loose-based tins you may need to place in the freezer for a couple of hours and then tip out.
To make the decorations print out emojis in the size of your desserts. Place a sheet of non-stick baking paper over the top. Pipe the decorations (see video for instructions). Add to the cheesecakes or serve to the table and let your friends make their own emoji.
