Spicy Asian Pumpkin Soup
Halloween is just around the corner which means that it is time to also cook like it is Halloween
Pumpkin, pumpkin and more pumpkin
And that is why today I am putting a super easy dish on the table for you guys. As said before, kitchen skills are not really something that happens in my house. But with that said, that also means that making this dish is actually super easy. Even I can do it ;)
What do you need for a one person portion?
- A small pumpkin
- 1 garlic chunk
- 1 sjalot
- 1 pepper of any kind
- coconut milk
- 1 vegetable stock block
- 1 Spring onion
- Couple slices of salami
- Vegetable oil
- A mixer of blender
How to get to work
- Start with dicing your onion, garlic, springonion, pepper and salami slices
- Get around 300 ml water to boil
- Also dice your pumpkin, but this does not have to be into small pieces, larger chunks will also do the trick
- Fry your garlic, onion and pepper in vegetable oil until the onions look glazy
- Add your pumpkin chunks and and just boiling water that your pumpkin chunks are under water
- Add your vegetable stock
- Let this boil until you can slice through the pumpkin effortless with a fork
- Add about 50/100 ml coconut oil
- Take your mixer and mush this whole soup directly into the pan untill it is a smooth mass
- Watch out with the steam coming of of the soup, because this might get really hot
- Once turned into a nice mass, acutally your soup is ready.

Dat ziet (en leest) er smakelijk uit :) Ben normaal niet zo van de pompoen, maar hiervoor maak ik een uitzondering :)
