Pamcooks pukkah potatoe parantha!!โค๐ฅ๐ง๐ฎโค
Hey my fab Steemians,
Hope you are having an amazing Easter!! Me and the family are all home scoffing our faces with chocolate.My fillings are hurting and I am off the sweet treats for a bit! I asked my kids what they felt like for lunch and they wanted mummie's parantha's.I have not posted much of my traditional indian recipes, so thought I would with this meal.
Parantah is a traditional flat bread made out of wholemeal flour stuffed with a filling.The most common fillings are potatoe, cauliflower and pulses.These flat breads are cooked on a Tava ( flat pan) and cooked in oil or ghee.Below is my version with my british twist of adding cheese.This recipe will make approx 8 medium size parantahs.
Ingredients
2 cups of Whole meal flour
1 cup of water
1 Tbsp Oil
Coconut oil spray
2 medium size potatoes
1/2 Cauliflower
1 Onion
15g Cheddar cheese
1 tsp Garam Masala
1 tsp Tumeric
1 tsp of Cumin seeds
1 tsp of Chilli powder(optional)
1 fresh Green chilli ( optional)
1 Tsp of Salt
1/2 Tsp Pepper
Method
Step 1. Place your wholemeal flour in a bowl and create a well in the middle.
Step 2. Pour the water and oil in the middle of the well.
Step 3. Mix the flour, oil and water by hand it will start to form together. (Pam's Tip- mix in circular motion with your fingers)
Step 4. Keep kneading the dough until it forms into a ball.The consitency should be firm.Cover and rest for 30 mins.
Step 5. Whilst dough resting.Peel and cut the cauliflower and potatoes and boil in water until tender ( i shred the cauliflower leaves and use too, it is apparently very healthy for you.)
Step 6. Once veggies are tender mash it all together.Leave to one side.
Step 7. In a cold pan add oil and cumin seeds.Heat until the seeds turn slightly brown ensure they dont burn.
Step 8. Add onions, tumeric, garam masala, salt and pepper.Mix to cook the spices ( I have left out chilli powder and fresh chillies as mine are child friendly)
Step 9. Once the onions turn golden brown add to the mashed potatoe and cauliflower.
Step 10. Add grated cheese.
Step 11. Now mix all the ingredients together and that is your filling done.
Step 12. Prepare a bowl with wholemeal flour and have your rolling pin ready.
Step 13. Divide your dough in 8 portions.Each individual dough piece should be slightly bigger then a golf ball.
Step 14. Coat your dough ball in flour and roll in your hand, so it is perfectly round.
Step 15. Now press down your ball and roll it out with the rolling pin.You want the diameter roughly 15cm.
Step 16. Once rolled place 2 big tbsp of the mixture in the middle of the parantha.
Step 17. Bring all the edges together in the centre.Pressing firmly to ensure no filling can escape.
Step 18. Flatten the middle.Sprinkle a little flour and slowly roll out again gently to a diameter of 13cm.
Step 19. Heat a pan on medium heat, spray with oil ( 4 sprays).Place the uncooked parantha on the pan.
Step 20. Cook the parantha either side for about 8 minutes occassionally turning over.Once golden brown remove of the pan.
There you have my wonderful parantha's.My family love this.Traditionally in india you would eat theses for breakfast or brunch.They are normally accompanied by salad, yoghurt and pickle.Served with a big dollop of butter in the middle.It is not for the faint hearted these flat breads.I personally do not use alot of oil and definitley no ghee.I have my coconut spray which works wonderfully.
What I love is you can literally stuff them with anything.You can even make the dough 2 days in advance.Also if you make curries at home and you have leftovers you can use that as your filling.These are fantastic as they are great for vegans and vegetarians and even carnivores like me!

Yep Abhi. It helps me coming from Indian background.My mum makes the best indian food! I have learnt so much from her recipes.I do tweek them a little.My kids do not do spice so my food is mild.lol.I will defo have to post more food like this.๐๐ผ

Thank you so much Ras for informing me of this.I honestly thought there was an error.Just a very wonderful unexpected surprise.It is not even the monetary side for me.I am so happy use actually like my post.As i blog recipes, these can be very time consuming.I do the initial write up, step by step photos, method and ingredients,whilst juggling 4 kids all under the age of 6.lol.It can get disheartening when i put so much effort and with very few upvotes.I know this is for the long haul, so I am ploughing on with steemit.Good things come to those who wait so slowly but surely I will get there.Having a curie boost is just fantastic for us minnows. Atleast our work is getting recognised and the extra exposures fantastic.๐๐๐

problem with me is i blog about 2 many different things.
I should just keep it to one and i would see a rise in my up votes too,
I seriously still confused and shocked.lol.I love your post.So spontanious, witty and entertaining. Your idea of kids cooking seemed like a good one.Get the misses involved too. I just think this may just be a lucky fluke for me.I will see when i put my next recipe up.
I'm afraid my misses would never do anything like that, she is the one who has the rains over what I do, otherwise i would probably be in prison by now by taking things to far.
I have a couple (many) mental health problems and I tend not to see dangers or that something bad is going to happen. my kids find me funny but the wife is normally rolling her eyes.
(she did marry me though so I must be doing something right haha)
