Oh Glorious Fish!

For the love of the Coconut!

Steamed fish is not uncommon in Jamaica. As a matter of fact if you have a cookout and not have either steamed fish or roast fish your even just got tanked!
There are many ways prepare steamed fish. And this is what I love about this dish.

So what do we need to make this simple yet delicious meal? Creativity. Yup you read right. There is no specific rule to follow when cooking steamed fish. You can add just about any ingredients... well not really let’s just keep the additives to vegetables

For my steamed fish I choose to stick to the following ingredients:

2 Medium Red Snapper
1 can unsweetened coconut milk
1 Stalk scallion
1 green pepper
1tsp Maggie Fish season
Olive oil
Vegetables of your choice

I really enjoy making my steam fish with vegetables. So I added pumpkin, okra and carrots as well as some water crackers.

Having prepped my fish and seasoned with fish seasoning. I heated the skillet and popped some cumming seed in to add flavor. The olive oil, fish and vegetables is then added and steamed at low heat. After about 15 minutes, the coconut milk is added. Cook for another 20 minutes on medium heat the crackers is the last to be added as they often soak up the liquid very quickly.

The coconut complemented the fish really nice. So the next time you think of making some steamed fish. Why not be creative with your base
